This dressing would be delicous served with a salad of baby cos lettuce, crispy pancetta, semi dried tomatoes, walnuts and avocado. Also lovely on roast or steamed potatoes. Yum!
This recipe is for 12 as an accompaniment and will keep for up to 1 day in a sealed container in the fridge.
- 75g blue cheese, chopped
- 1/2 cup sour cream
- 1 green shallot, thinly sliced
- 1 garlic clove, crushed
- 1 tbs white wine vinegar
- 1 tbs light olive oil
- 1 tbs whole egg mayonnaise
- 2 tsp Dijon mustard
- salt and pepper
- Place all ingredients in a food processor and whizz until smooth.
