Thai style fish cakes with lime mayonnaise


  • 1kg boneless white fish fillets (such as flake), chopped
  • 1/4 cup firmly packed chopped coriander
  • 3 green shallots, coarsely chopped
  • 2 small red chillies, chopped
  • 2 tsp grated lime rind
  • 1/3 cup lime juice
  • 1 tbs grated ginger
  • 1 garlic clove, crushed
  • 1 egg
  • 1 cup vegetable oil


  • 2/3 cup quality whole egg mayonnaise
  • 5 fresh kaffir lime leaves, shredded
  • 2 tsp grated lime rind


  1. Combine fish, coriander, shallots, chilli, line rind, lime juice, ginger, garlic and egg in the bowl of a food processor. Season with salt and pepper and process until combined.
  2. Shape mixture into patties, Cover with plastic wrap and chill in the fridge for 1 hour.
  3. To make lime mayonnaise, combine ingredients in a bowl and season with salt.
  4. Cook patties for 3 minutes each side and transfer to a plate to cool. Serves 8 as an entree.
