- 60g butter
- 1 garlic clove, crushed
- 2 tbs shredded basil
- 4 chicken breast fillets
- 1/4c dried breadcrumbs
- 1tbs olive oil
- Preheat oven to 180C. Place butter, garlic and basil in bowl and stir to combine. Cut a horizontal slit into chicken and stuff with basil mixture.
- Dip chicken in breadcrumbs. Cook chicken in pan for 2-3 minutes each side. Transfer to oven tray and cook for further 10 minutes in oven.
- Serve with Sauteed peas, bacon and leek.
