Monkey bread


  • 85ml milk
  • 50ml water
  • 10g sugar
  • 10g yeast
  • 1 egg
  • 30g butter, melted and cooled
  • 310g bread flour
  • 1 tsp salt

Butter mix

  • 80g butter
  • 45g sesame seeds
  • 2 cloves garlic
  • 1 tbs chopped fresh coriander or parsley
  • 2 red chillies, chopped and seeded
  • 1/2 tsp salt


  1. Preheat oven to 170C.
  2. Put milk, water, yeast and sugar in a bowl and stir to dissolve yeast. Add egg, butter, flour, salt and mix to form a dough, about 10 mins. Set aside to double in size.
  3. Melt butter and mix with the remaining ingredients for the ‘Butter Mix’. Place 1/3 of the ‘Butter Mix’ in the bottom of a tin. Form walnut sized balls and place in tin, side by side. Pour remaining ‘Butter Mix’ over the top and set aside to rise for a further 40 minutes. Bake in oven for approximately 30 minutes.
