  • 60g butter
  • 1 garlic clove, crushed
  • 2 tbs shredded basil
  • 4 chicken breast fillets
  • 1/4c dried breadcrumbs
  • 1tbs olive oil


  1. Preheat oven to 180C. Place butter, garlic and basil in bowl and stir to combine. Cut a horizontal slit into chicken and stuff with basil mixture.
  2. Dip chicken in breadcrumbs. Cook chicken in pan for 2-3 minutes each side. Transfer to oven tray and cook for further 10 minutes in oven.
  3. Serve with Sauteed peas, bacon and leek.
