Garlic lemon potatoes


  • 1kg chat potatoes, quartered
  • 1tbs extra light olive oil
  • 1 tbs lemon rind
  • 1 garlic clove, crushed
  • 1/2 tsp salt
  • 1/4 tsp pepper


  1. Preheat oven to 220C. Cook ptoatoes for 8 minutes or until tender. Drain.
  2. Place potatoes and other ingredients in pan and roast for 20 minutes or until golden brown and crisp.

Serve with Italian beef rissoles and tomato salsa.
