Ingredients
- 2 tbs olive oil
- 2 garlic cloves, crushed
- 1 tbs ground cumin
- 1 tbs coriander
- 2 tbs finely grated fresh ginger
- 2 tsp smoked paprika
- 1/4 tsp cayenne pepper
- 800g beef round steak, cut into thin strips
- Tzatziki dip to serve
- Eggplant salad
- 8 small lebanese eggplants, halved lengthways
- 8 small zucchini, ends trimmed, halved lengthways
- 2 red capsicums, halved, deseeded, thin strips
- 2 tbs olive oil
- 1 cup torn basil
Directions
- Combine spice mixture and add beef strips. Skewer and place in fridge to marinate.
- Cook vegetables and beef on bbq. Serve with dressing.
