Italian beef rissoles with fresh tomato salsa (serves 4)


  • 750g beef mince
  • 3/4c fresh bread crumbs
  • 150g bought chargrilled capsicum
  • 1/4c pitted olives, sliced
  • 1/4c shredded basil
  • 1 garlic clove, crsuhed
  • 1 egg, whisked
  • 1 red onion, sliced
  • salt and pepper
  • 2 medium ripe tomatoes, chopped
  • 2 tbs extra virgin olive oil
  • 1 tbs basil
  • 120g salad leaves


  1. Combine mince, breadcrumbs, capsicum, olives, basil, garlic, egg, half onion in bowl. Season and shape into 8 patties.
  2. Cook patties on bbq plate.
  3. Combine tomato, oil, extra basil and onion in a bowl. Season.
  4. Serve with salad leaves.

Can be served with Garlic lemon potatoes.
