- 1 cup self raising flour
- 1/4 tsp bicarbonate soda
- pinch salt
- 2 tbs caster sugar
- 3/4 cup of milk soured with 1 tsp vinegar
- 1 egg, lightly beaten
- 1 tbs melted butter
- In a bowl, sift together flour, bicarbonate soda, salt and caster sugar.
- Make a well in the centre and stir in soured milk and egg. Mix in melted butter.
- Spoon tablespoons of batter into a a frypan greased with butter. Cook over a medium heat until surface bubbles and base is golden and then turn and cook other side. Makes approximately 12 pikelets – delicious served with plenty of jam and fresh whipped cream!
