Ingredients
- Melted butter to grease
- 1/2 cup flaked almonds
- 150g butter
- 1/2 cup caster sugar
- 2 eggs
- 1 1/2 cups self raising flour
- 3/4 cup buttermilk
- 1 tsp orange rind
- 1 tbs fresh OJ
- SOUR CREAM ICING
- 1/2 cup sour cream
- 1/4 cup icing sugar mixture
Directions
- Preheat oven to 180 degrees. Grease a cake pan. Spread almonds over a baking tray and cook in oven for 3 minutes or until toasted. Remove from oven and set aside.
- Beat butter and sguar until pale and creamy. Add eggs 1 at a time. Stir in half flour and half buttermilk until combined, then add remaining ingredients with orange rind and OJ. Spoon into cake pan and bake for 35 minutes. Allow to cool for 5 minutes before inverting onto a wire rack.
- Beat sour cream and icing mixture together. Ice cake, scatter almonds on top.
NOTE: Lemon or lime can be used instead, thickened cream can be used instead of sour cream.
