Ingredients
Chicken
- 1 tbs lemon rind
 - 2 tbs lemon juice
 - 1 tbs olive oil
 - 2 garlic cloves
 - 1/2 tsp chilli powder
 - 8 chicken thigh fillets
 
Guacamole
- 2 avocados
 - 2 tbs lime juice
 - 8 flour fajita tortillas
 
Tomato salsa
- 250g punnet cherry tomatoes
 - 270g can corn kernels
 - 1/2 fresh coriander
 - 1/2 small red onion
 - 2 green shallots, sliced
 - 2 tbs lemon juice, 1 tbs olive oil
 
Directions
- Place lemon rind, juice, oil, garlic and chilli powder in glass or ceramic bowl. Add chicken and allow to marinate.
 - Mash avocado with lime juice.
 - For salsa, add tomato, corn, coriander, onion, shallot, lemon juice and oil.
 - Cook chicken on bbq for 4-5 minutes each side until cooked. Serve.
