Carrot cake

I sometimes double the spices in this recipe because I enjoy the flavour but it is up to you.


  • 2 cups brown sugar
  • 2 cups flour
  • 1 tsp salt
  • 2 tsp cinnamon
  • 1 tsp ground ginger
  • 1 tsp nutmeg
  • 1 tsp baking powder
  • 1 1/2 cups vegetable oil
  • 4 eggs
  • 3 cups grated carrot
  • 1 cup chopped walnuts


  1. Preheat oven to 180C. and prepare round cake tin.
  2. Combine sugar, flour, salt, spices, baking powder and oil in a bowl.
  3. Add eggs one at a time.
  4. Stir in carrots and walnuts.
  5. Cook for 50-60 minutes or until skewer inserted into the centre of the cake comes out clean.
