Sticky drumsticks

Ingredients 8 chicken drumsticks 1/2c honey 1/4c red wine vinegar 1 tbs wholegrain mustard 2 garlic cloves, crushed 1 tbs paprika 1 tbs fresh oregano 1 tbs sesame seeds salt and pepper 2 tsp vegetable oil 1/4c slivered almonds 2 bunches broccolini 1 tbs thick soya sauce Directions Cut slashes into the drumstick. Combine honey, vinegar, mustard, garlic, paprika, oregano, sesame seeds in bowl. Toss in chicken. Place in fridge to marinate for 4 hours. Preheat oven to 200C. Baked lemon chicken pieces with proscuitto and herbs

Ingredients 12 chicken thigh cutlets 3 large lemons 15 proscuitto slices 3 garlic cloves, sliced 3/4c fresh sage leaves 3/4c fresh marjoram leaves 2 sprigs rosemary salt and pepper 2 tbs olive oil Directions Place chicken cutlets in large roasting pan. Cut rind from lemons and then juice. Place lemon rind and proscuitto between chicken cutlets in the pan. Sprinkle chicken with garlic, sage, marjoram and rosemary. Cover and refrigerate for 1 hour. Preheat oven to 170C. Bake chicken for 40 minutes until golden and cooked through. Serve with potato and spinach.

Duck breast with blue cheese and apple

Ingredients 6 duck breasts pepper 3 green apples, each cut into 12 wedges 1/4 tsp cinnamon 1 tsp sugar 80g butter 220 gorgonzola (blue cheese) 4 handfuls roquette 1 1/2 tbs walnut oil 1/2 tbs red wine vinegar salt Directions Place the seasoned duck breasts in a hot frying pan, skin side down, to melt and crisp, then turn on the meat side for 2 mins. Devilled Chicken
