This is another of my Grandma’s recipes – it is a tradition at her home to have a roast dinner and dessert for lunch every day so she has perfected both!



  • 50g butter
  • 50g sugar


  • 1 egg
  • 50g flour
  • 1 tsp baking powder


  1. Have partially stewed fruit very hot in a pie dish. You can use apple, rhubarb, plums etc… it is up to you.
  2. Pour sponge mixture on top and bake at 180C for around 30 minutes or until sponge is cooked through. Delicious served with lemon honey, custard or cream.
