Mixed herb chicken with potatoes and roasted garlic dressing

Ingredients 6 garlic cloves, unpeeled 60g butter, softened 1/3 cup coarsely chopped parsely 1 tbs chopped thyme 1 tsp lemon rind 8 chicken thigh cutlets 4 medium desiree potatoes, unpeeled, thickly sliced 1/2 cup olive oil salt and pepper 2 medium capsicums, chopped 2 tbs balsamic vinegar 1 tbs wholegrain mustard baby spinach leaves to serve Directions Preheat oven to 190 degrees. Moroccan chicken with preserved lemons and couscous

Chinese Chicken Wings

Ingredients 2.5 kg chicken wings .25 cup soy sauce 2 cloves garlic 1 tbs grated ginger salt and pepper 1 tsp brown or palm sugar 2 tbs dry sherry 2 tbs oil 1 tbs honey Optional: 2 tsp Chinese Five Spice Directions Chicken wings: either fold into triangles or cut off wing tips and cut remaining part into 2 pieces. Mix all ingredients. Marinate overnight if possible. Pour wings and marinade into baking dish and cook at 190 for 35-40 minutes, turning occasionally, or until done.

Semi dried tomato chicken with spinach salad

Ingredients 1/2 cup drained semi dried tomato 4 large chicken breast fillets 8 slices pancetta 80g spinach leaves 1 small red onion 100g baby bocconcini 1/4 cup red wine vinegar 1/4 cup extra light olive oil 1 tsp caster sugar salt and pepper Directions Place semi dried tomatoes in a food processor and process until finely chopped. Cut an incision into the side of the chicken breast and place sundried tomatoes into each pocket. Wrap pancetta around each chicken breast. Cook chicken on grill plate until cooked. Allow to rest. Combine spinach, onion, bocconcini in a bowl. Make dressing. Serve.

Spiced lamb chops

Ingredients 8 lamb chops 2 garlic cloves, crushed 1 tbs lemon juice 1 tsp honey 1 tsp ginger 1 tsp cumin 1 tsp coriander 1/2 tsp cinnamon Directions Marinate for 2 hours before cooking. Can be served with Pasta salad with tahini dressing.
