Raspberry chocolate mousse tart

Ingredients 300ml thickened cream 300g good quality dark cooking chocolate 2 tbs caster sugar 2 eggs, lightly beaten 2 tbs Kahlua 1 300g packet frozen raspberries Shortcrust pasty Directions Place pastry in tart tine and blind bake for 15 minutes at 200 degrees. Remove weights and bake for 12 minutes at 180 degrees. Place cream and chocolate in a saucepan over low heat until smotth. Stir in sugar, egg and Kahlua. Scatter one cup of raspberries over pastry base and cover with chocolate mixture. Bake in oven for 18 minutes until set. Allow to cool.

Rhubarb and berry crumble

Ingredients 850g trimmed and cleaned rhubarb, chopped coarsley 1 cup caster sugar 1 1/2 cup frozen mixed berries 1 cup self raising flour 125g butter 1 1/2 tsp ground cinnamon 1/2 cup firmly packed brown sugar 2/3 cup toasted hazlenuts, chopped coarsely Directions Preheat oven to 180 degrees. Combine rhubarb and sugar in large frying pan, cook uncovered until rhubarb is tender. Remove from heat and fold through berries. Rub butter into flour in a bowl, stir in cinnamon, brown sugar and hazlenuts. Place into a dish and bake for about 20 minutes, or until golden.

White chocolate brulee

Ingredients 600ml double cream 225g white chocolate 1tbs caster sugar 4 egg yolks 2tsp cornflour 4tbs demerara sugar Directions Put the cream and sugar in a bowl and melt above a pot of water. Beat together sugar, egg yolks and cornflour. Gradually whisk in the cream mixture. Set the pan over a low heat and bring almost to the boil, stirring constantly until the mixture thickens and coats the back of a wooden spoon. Remove from heat and pour into six ramekins. Mexican chicken with salsa and guacamole

Ingredients Chicken 1 tbs lemon rind 2 tbs lemon juice 1 tbs olive oil 2 garlic cloves 1/2 tsp chilli powder 8 chicken thigh fillets Guacamole 2 avocados 2 tbs lime juice 8 flour fajita tortillas Tomato salsa 250g punnet cherry tomatoes 270g can corn kernels 1/2 fresh coriander 1/2 small red onion 2 green shallots, sliced 2 tbs lemon juice, 1 tbs olive oil Directions Place lemon rind, juice, oil, garlic and chilli powder in glass or ceramic bowl. Garlic and basil stuffed chicken

Ingredients 60g butter 1 garlic clove, crushed 2 tbs shredded basil 4 chicken breast fillets 1/4c dried breadcrumbs 1tbs olive oil Directions Preheat oven to 180C. Place butter, garlic and basil in bowl and stir to combine. Cut a horizontal slit into chicken and stuff with basil mixture. Dip chicken in breadcrumbs. Cook chicken in pan for 2-3 minutes each side. Transfer to oven tray and cook for further 10 minutes in oven. Serve with Sauteed peas, bacon and leek.
