A few days on Waiheke Island

Waiheke Island is a short 30 minute ferry ride from Auckland harbour, and it’s the playground for Aucklanders for good reason. Stunning rolling hills, beautiful bays and delicious food and wine, it’s quite a place! The beauty of the island is well known, with hundreds of visitors arriving every weekend for day trips, weddings and holidays. Don’t let that put you off, there is a lot to explore and we often found ourselves the only ones on a beach, on a bay, or admiring a view. You just need to pick your time and go! Access to a car is also...

Shaved cauliflower salad

Shaved cauliflower salad

For me to enjoy having a salad (and especially a vegetarian salad!) as a main meal, it needs to be seriously delicious. This salad was exactly that. A Mandoline slicer will be your friend so this salad a cinch to make. We demolished it in no time, so is definitely good as a meal on its own or you could serve it as a side dish if you wish. Spinach cob loaf dip

This recipe is a stand out crowd pleaser. One of the reasons I love cooking is seeing the joy on someone’s face when they eat and enjoy something I have made. Once you put this dip on the table it will be instantly surrounded by a crowd of people who can’t stop dipping and dunking, it’s so good and it will be gone in about 10 minutes flat. A friend’s mum made it at a party years ago and I only just asked for the recipe, wish I had asked sooner! I made a few tweaks and this the result....

Satay chicken and vegetable stirfry

We were counting down the days to our trip to Vanuatu so I was in operation Fridge Clean Out mode and eating what we had so nothing went to waste. While riding home from work I was trying to figure out what we could have for dinner as the options were dwindling… but then I remembered I had a trusty can of Ayam satay sauce in the cupboard! Another reason for always having one in your pantry – instant flavour. I had a pile of vegetables in the fridge and a chicken breast in the freezer, along with a packet of...
