Middle Eastern chickpea and vegetable salad

Ingredients

  • 500g chat potatoes
  • 1 bunch asparagus
  • 200g sugar snap peas
  • 400g can chickpeas, rinsed
  • 1 large red capsicum, halved, deseeded, chopped
  • 1 baby cos lettuce
  • 1/2 small red onion
  • 1/4 cup shredded mint

DRESSING

  • 2 tsp mild paprika
  • 1 tsp black pepper
  • 3/4tsp cumin, coriander, cinnamon
  • 1/2 tsp cloves, cardamon, fennel
  • 1 tbs olive oil
  • 1 garlic clove, crushed
  • 2 tsp lemon rind, 2 tbs lemon juice

Directions

  1. Cook potatoes, asparagus and sugar snap peas.
  2. Heat spices and garlic until fragrant. Remove from heat and add remaining ingredients.
  3. Mix everything together and serve.
