Shaved cauliflower salad Dine in

For me to enjoy having a salad (and especially a vegetarian salad!) as a main meal, it needs to be seriously delicious. This salad was exactly that. A Mandoline slicer will be your friend so this salad a cinch to make. We demolished it in no time, so is definitely good as a meal on its own or you could serve it as a side dish if you wish. I think it would be lovely packed for a picnic to enjoy the gentle winter sun, the salad can soften in the dressing for a while no trouble! Ingredients 1/4 head...

Ode to satay sauce Dine in

This post (and one to come) are an ode to satay sauce. Specifically Ayam brand satay sauce. It’s delicious and I highly recommend you seek it out from your local Asian grocer (I can’t usually find it in the supermarket) and keep it as a cupboard staple. Today’s dish is Indonesian gado gado, a room temperature salad made with a variety of ¬†lightly steamed vegetables alongside the necessary boiled egg, sambal and prawn crackers. The simplicity of the salad is the secret, along with a very decent satay sauce (you can make your own with this recipe if you’re keen!)...

Simple roast fennel pasta Dine in

This is one of my favourite recipes to make when I’m feeling lazy or I’m cooking for one. Apart from chopping a few bits, the oven does all the hard work for you! Once roasted, the strong aniseed flavour mellows and caramelises into a sweet, soft partner to the pasta, jazzed up with a bit of chilli, garlic and lemon. I had a handful of lonely spinach leaves which I added this time around, use this recipe as a base to add or remove bits as your fridge allows. Let me know where this recipe takes you. Ingredients 1 large...

Coconut, pumpkin, spinach and lentil soup Dine in

After spending 3 days cooped up in a hotel at a work conference, eating very average buffet food and subsisting in rooms without fresh air or natural light I could not think of anything better than a big bowl of vegetable soup for dinner when I got home. This recipe is a combination of others I read and I like it for the simplicity, subtle spice and big hit of vegetables. It’s almost more stew than soup. Garam masala is an excellent one stop spice blend to keep in your pantry – maximum flavour for zero effort and much easier...

Spinach and ricotta cannelloni Dine in

I was googling for an easy spinach and ricotta recipe and for some reason was pretty difficult… all the recipes I came across had too many ingredients or too many steps for a school night so I made this up instead. It turned out really well! You can’t go wrong with an all in one baked dinner which can go straight from oven to table. I made a point of using whole ingredients, by that I mean not using 600g of ricotta when you can buy 250g or 500g pre packaged in the supermarket (also, zest or juice from half...
