Super quick breakfast burrito

I really don’t like waste so with half a can of refried beans left in the fridge I needed to come up with a way to use it up. I’m a bit embarrassed to share this recipe actually because it is not the sexiest meal you’re ever going to come across, but it’s good. Quick enough for a work morning too, you could probably have it cooked by the time you have boiled the kettle and made a cup of tea. It is not complicated so I don’t really think you need a recipe, but I’ll share the process with you just in case you have a hankering for a filling and delicious breakfast. Avocado would go nicely with this too, but honestly the basic combo is a winner.

Method

  1. Set a fry pan over a medium high heat and when hot, crack your egg/s into the pan.
  2. While the eggs are cooking, put your tortilla on a plate, spread on the refried beans and add a good handful of grated cheddar cheese.
  3. Place the plate in the microwave to warm the beans and melt the cheese, about 20 seconds.
  4. When your eggs are done to your liking, add the eggs to your tortilla and splash on your hot sauce of choice. Wrap. Eat. Done!
