Coconut, pumpkin, spinach and lentil soup Dine in

After spending 3 days cooped up in a hotel at a work conference, eating very average buffet food and subsisting in rooms without fresh air or natural light I could not think of anything better than a big bowl of vegetable soup for dinner when I got home. This recipe is a combination of others I read and I like it for the simplicity, subtle spice and big hit of vegetables. It’s almost more stew than soup. Garam masala is an excellent one stop spice blend to keep in your pantry – maximum flavour for zero effort and much easier...

The best laksa Dine in

Laksa is a very popular spicy, noodle soup and like most great dishes everyone has a variation which they think is superior! My version of course comes from Plenty More, my go to recipe book for vegetarian meals that are guaranteed to pass muster with Mr “It’s not a meal without meat”. I love the coconut curry broth version of laksa and find the flavours really comforting and nourishing (as my Grandma would describe any good soup, but I’m pretty sure she has never had one like this!) Asian cooking is all about balance between hot, salty, sour and sweet...

Home made tomato soup Dine in

I had a hankering for tomato soup when I was in the supermarket the other day so I wheeled over to the the cans of Heinz tomato soup, picked one up and turned the label around to look at the ingredients. Yikes. I couldn’t understand much of it so I put the can back and decided to make it myself. Soup is the perfect lazy dinner because once you have softened your veggies, the rest of the time it is simmering away taking care of itself (as an aside, someone was telling me once about a soup maker, an appliance which basically...

Ash-e reshteh Dine in

Are there certain foods that give you a food grin? Roti canai is one food that makes me happy (if you have never tried it, you must go to Mamak) and this soup is a new addition to the list. It takes a couple of hours to make if you take your time like I did (and a bit of foresight so you remember to soak the beans overnight). The soup is a labour of love… but well worth the love and attention you give it. Who knew a “simple” soup of caramelised onion, garlic, turmeric and herbs could be so...

Thai red pumpkin soup Dine in

It was a cool day in Sydney yesterday, and cool days mean warm bowls of soup. I had 1/4 of a pumpkin, and a bit of left over coconut milk but no jars of Thai red curry paste and no desire to leave the house. Fortunately, I had all the ingredients I needed to make it from scratch. It took all of 5 minutes in a whizzer and was absolutely delicious. The surplus went into small containers in the freezer for another meal. I am already planning when I can make red chicken curry! Ingredients Paste 3 tsp white pepper...
