Chocolate chip cookies with oats, banana and coconut Dine in

It’s a good idea to have a few biscuit recipes in your back pocket (or recipe book) as they are so quick to pull together and often with ingredients you already have in the pantry. I had a couple of browning bananas so I doubled this recipe and with one bowl and about 20 minutes I had warm chocolate chip cookies – delicious! I probably shouldn’t have made them before dinner though… warm cookies straight from the oven are irresistible. Ingredients 1 very ripe medium banana 1/3 cup vegetable oil 2/3 cup sugar 1 tsp vanilla extract 3/4 cup plain flour...

Eggs three ways Dine in

I used to say that I can cook but I can’t boil an egg. Boiling an egg was (in theory) the first thing you learned in the kitchen but it was something I found difficult to master. Too many variables! Egg size. Egg temperature. Water temperature. Timing. End result – unknown until you crack the top. Egg yolk – solid, runny or too far gone with an unappealing ring of green. White just set and perky or with the consistently of the snot from a runny nose. I am proud to say that I can now raise my slotted spoon...

Delicious monkey bread Dine in

I don’t know why this bread is called Monkey Bread, if someone can enlighten me that would be great! This recipe was on strong rotation when I was growing up and Mum would often make a batch or two when we had people coming over for dinner. My cousin Amy was particularly fond of it and Mum still makes it for Amy when she visits! We had a couple of friends over for afternoon tea and I had a giant bunch of parsley in the fridge, so I decided to make Monkey Bread for the first time (on my own!...

Carrot cake Dine in

I had 3 sad carrots lost in my fridge drawer so instead of making soup I turned them into a delicious carrot cake. I made this recipe regularly when I lived in France as my host dad loved to have a slice (sans icing) for breakfast every morning which he dunked in his bowl of coffee. I haven’t made this recipe for years and I have no idea why  (original post) – moist, slightly spiced cake spotted with crunchy nuts and covered in cream cheese icing, what’s not to love? I also owed a friend some baked goods after being on...

Oven poached quinces Dine in

I love autumn for the hard, craggy, bright yellow fruit which turns into beautiful rose scented, ruby coloured segments with a few hours of tender cooking in the oven. The longer you cook them the darker they become, what a wonder! From my experience, baking them in the oven is the easiest way because they can gently cook undisturbed. I have a tendency to poke anything cooking on the stove This is based on David Lebovitz’s recipe which of course is simple and delicious. Flavour friends with quince are ginger, lemon, cinnamon quills or vanilla but my suggestion is to not overcomplicate the...
