Simple roast fennel pasta Dine in

This is one of my favourite recipes to make when I’m feeling lazy or I’m cooking for one. Apart from chopping a few bits, the oven does all the hard work for you! Once roasted, the strong aniseed flavour mellows and caramelises into a sweet, soft partner to the pasta, jazzed up with a bit of chilli, garlic and lemon. I had a handful of lonely spinach leaves which I added this time around, use this recipe as a base to add or remove bits as your fridge allows. Let me know where this recipe takes you. Handful Prawn Pasta Dine in

Cooking in self catering accomodation is a bit of an art. You need to make do with a (usually) ill equipped kitchen with blunt knives, not enough saucepans and a non existent pantry so you need to make maximum flavour with minimum ingredients. I called this Handful Prawn Pasta because that was how I measured everything out, using delicious prawns from Canarvon WA (well up the coast from Perth, but still fresh and so sweet), local colourful tomatoes, breadcrumbs made from my woodfired loaf of bread, along with parsley, garlic and lemon. Simple and delicious. Pangrattato is also known as poor...

Buttery soft roast lamb shoulder Dine in

My absolute favourite way to roast meat at the moment is slow roasted lamb shoulder. It’s so easy to do and absolutely yum served with a variety of different sides. We enjoyed this particular lamb with coleslaw and flat bread, and then left overs with tabbouleh and tzatziki later in the week. If you are coming to our house for a meal, chances are I’ll serve you lamb because it can just cook away in the oven while I socialise and enjoy your company! Make sure you enjoy the caramelised roasted garlic from the pan as well… delicious! Ingredients 1/4 cup...

BBQ cajun chicken Dine in

The weather is finally warming in Sydney (most days anyway..!) so it’s finally time to get back into BBQ dinners. We live in a townhouse beside a heritage listed house which has been turned into 4 flats. I often feel sorry for my neighbours when I’m outside cooking on the BBQ because I’m quite sure all the smells are headed straight for their living rooms. I don’t think everyone would appreciate roasted eggplant (for baba ghanoush) or sealing BBQ pork ribs for a long slow cook in the oven at 8am in the morning  as I do (yes, that’s right)...

Sambal roasted salmon parcels Dine in

The perils of shopping online. Most of the time I don’t mind giving control to my “personal shopper” and I’m happy to get what I’m given instead of wrestling wonky shopping trolleys in the supermarket with a scowl on my face. Today though, bit annoyed. I purchased two pieces of salmon. Clearly my “personal shopper” had a bit of a dilemma in the deli. “Does Sally want mid section or tail? Not sure. I’ll hedge my bets and give her one of each.” Dinner tonight is going to be two flavoursome pieces of salmon, one over and one under cooked. Oh...
