Pesto potato bake

Ingredients

  • 450g chat new potatoes sliced
  • 2tbs Parmesan cheese
  • .5 cup chicken stock

PESTO

  • 1 c basil leaves
  • 1 cup parsley sprigs
  • 3 cloves garlic
  • 1 tbs pine nuts
  • 2tbs chicken stock
  • 1 tbs Parmesan
  • 1 tbs lemon juice
  • 1tbs water 2 tbs olive oil

Directions

  1. Process pesto ingredients.
  2. Lightly spray baking dish with oil
  3. Lay out 1/3 of sliced potatoes
  4. Top with 1/3 pesto & 1/2tbs cheese
  5. Repeat
  6. Heat stock to simmering
  7. Pour over potatoes
  8. Cover with alfoil
  9. Bake at 200 for 35 minutes
  10. Remove foil
  11. Cook 10 more minutes or until potatoes are soft
