Mexican chicken with salsa and guacamole

Ingredients

Chicken

  • 1 tbs lemon rind
  • 2 tbs lemon juice
  • 1 tbs olive oil
  • 2 garlic cloves
  • 1/2 tsp chilli powder
  • 8 chicken thigh fillets

Guacamole

  • 2 avocados
  • 2 tbs lime juice
  • 8 flour fajita tortillas

Tomato salsa

  • 250g punnet cherry tomatoes
  • 270g can corn kernels
  • 1/2 fresh coriander
  • 1/2 small red onion
  • 2 green shallots, sliced
  • 2 tbs lemon juice, 1 tbs olive oil

Directions

  1. Place lemon rind, juice, oil, garlic and chilli powder in glass or ceramic bowl. Add chicken and allow to marinate.
  2. Mash avocado with lime juice.
  3. For salsa, add tomato, corn, coriander, onion, shallot, lemon juice and oil.
  4. Cook chicken on bbq for 4-5 minutes each side until cooked. Serve.
