Ingredients
- 1kg chat potatoes, quartered
- 1tbs extra light olive oil
- 1 tbs lemon rind
- 1 garlic clove, crushed
- 1/2 tsp salt
- 1/4 tsp pepper
Directions
- Preheat oven to 220C. Cook ptoatoes for 8 minutes or until tender. Drain.
- Place potatoes and other ingredients in pan and roast for 20 minutes or until golden brown and crisp.
Serve with Italian beef rissoles and tomato salsa.
