Guilt free lemon and poppy seed cake Dine in

I love baking with butter… and sugar… and white flour. Pretty controversial! I’m sure the gluten/dairy/egg/sugar free concoctions taste OK and I get that some people have genuine allergies which need to be seriously considered. However, for the same reason I don’t call spiralized zucchini “pasta” (it’s grated zucchini) or cauliflower rice “rice” (it’s blitzed cauliflower) I don’t do baking without the good “bad” stuff. Food wasn’t always demonised and labelled and people weren’t always made to feel guilty for eating what they enjoy. When my parents were growing up you ate what you were given and what you were given was...

Simple yoghurt cake Dine in

When I lived in France, I would often make cake for my host dad Fabien because he enjoyed a slice of cake with his bowl of milky coffee for breakfast most days. He loved my carrot cake and also a caramel mudcake I haven’t made for about 14 years – so I will have to dig out the recipe and make it again. I’m sure he would have loved this yoghurt cake too – it’s simple enough for every day but you can easily jazz it up for something more special with icing, or fruit… or… let your imagination go. This...

Easy red velvet cupcakes Dine in

This recipe is from a friend of mine (aren’t the best ones always from people you know?!) and it’s really easy and really good. You can make it in one bowl if you wash the bowl while the cupcakes are in the oven, so that means one less reason not to make them! These cupcakes have a super light crumb with a hint of cocoa – the chemical reactions with the bicarb, vinegar and buttermilk do all the hard work. The cream cheese frosting is decadent and delicious – I don’t really need to say anymore than that! Do yourself a...

Carrot cake Dine in

I had 3 sad carrots lost in my fridge drawer so instead of making soup I turned them into a delicious carrot cake. I made this recipe regularly when I lived in France as my host dad loved to have a slice (sans icing) for breakfast every morning which he dunked in his bowl of coffee. I haven’t made this recipe for years and I have no idea why  (original post) – moist, slightly spiced cake spotted with crunchy nuts and covered in cream cheese icing, what’s not to love? I also owed a friend some baked goods after being on...

Lemon yoghurt cake Desserts / Dine in

I make this lemon cake when I need a sweet treat that uses one bowl and takes no time to make. Most of the ingredients I have on hand and if I don’t, I have made substitutions with equal success. Vegetable or rice bran oil, even a smidge of olive oil in a pinch. Yoghurt, buttermilk, sour cream, smidge of milk to spin it out – totally fine! One bowl means hardly any washing up, so there really aren’t any excuses not to make it! The crumb is moist and light, with a sharp lemon tang balanced with some sweetness. The...
