Stuff on bread Dine in

I have (unfortunately) settled back into Sydney and returned to work after our wonderful trip to Amsterdam and I have fallen into my normal summer breakfast routine of muesli, natural yoghurt and fresh fruit. Our daily breakfast while we were in Amsterdam was rye bread topped with a slice of cheddar cheese (there were seemingly hundreds of varieties in the supermarket!) and a slice of cured meat, either smoked ham or ontbijtspek (a delicious smoked speck-ish product) and it was delicious and kept me full until well past lunch. Jerk chicken and home made flat bread Dine in

Stuart took himself shopping while I was working interstate and came home with ice cream, orange juice, chocolate and corn on the cob. Not to the standard of my usual weekly shop but as the corn was still in the fridge on my return I had to use it up so I decided to make jerk chicken. Cinnamon scrolls Dine in

Whipping up a batch of these cinnamon scrolls made me feel like a rock star – they look super complicated (but they really aren’t) and they while they are baking they smell good enough to wake a sleeping giant. Mum used to make a version of these when we were kids, studded with walnuts and sticky with brown sugar. Mum and I have made this recipe before and substituted marinated artichokes which were also delicious. Obviously, they don’t need to be pre-cooked! If using marinated artichokes I would suggest cooking the artichokes, spring onion, bacon and chicken together for about 30 minutes, instead of one hour. Ingredients 300g redfish fillets 3cm piece fresh ginger, grated 1 lime, juice and rind 1 egg white 1 tsp fish sauce 1/2 cup fresh coriander leaves 4 green shallots, trimmed, chopped 2 tbs olive oil Directions Process fish fillets, ginger, lime juice, egg white and fish sauce in a food processor until smooth. Add coriander and shallots, process until just combined. Shape mixture into 8 patties. Heat oil in a non stick fry pan over a medium heat and cook for about 3 minutes each side. Serve with sweet chilli sauce or the Vietnamese dipping sauce.
